A Meal for One
A really simple soup to make with ready-made vegetable stock. You can use any stock, or make your own home made vegetable stock
Carrot Soup with Orange and Mint
- 500ml vegetable stock
- 1 large carrot, diced
- 1/2 onion
- 1 clove of garlic
- Small potato, grated
- 100ml of orange juice
- Salt and pepper to taste
- Fresh Mint
- In a medium pot, bring the stock slowly to a boil.
- Add the carrot, garlic and potato.
- Cover and simmer for 20 minutes or until veggies are tender
- Stir in orange juice, seasoning and mint
- Simmer for 5 minutes.
