It’s been a while since I’ve made this pie, it was a staple when my kids were growing up.
It’s simple to put together, it’s filling, kids love it and it’s cheap. This is just one more reason for you to keep pastry sheets in your freezer.
It’s not really a pie, just a layer of puff pastry on the top. Simple.

- 6 pork sausages
- 1 apple peeled and sliced
- 3 leeks trimmed and sliced
- 1 TBLspoon plain flour
- 200 ml stock
- 1 sheet puff pastry ready rolled
- parsley to garnish

- Heat oven to 200C/180C fan
- Brown the sausages in a large pan, remove and set aside
- Remove almost all of the fat left in the pan then add leeks and soften for 8-10 mins
- Add apple and cook for an extra minute or so
- Remove the apple and leeks. Set aside
- Quickly stir the flour through the pan. Pour the stock over, keep stirring until flour is absorbed
- Place chopped sausages in pie dish or other oven-proof dish. Place the apple and leeks over the sausage chunks
- Pour the stock from the pan over the sausages apple and leeks
- Top with pastry, trimming off any excess. Glaze with a little milk or beaten egg wash
- Bake for approx 25 mins until golden
