I’d like to try some exotic Indian cookery so I started with just one dry spice blend. I went with garam masala and sparingly sprinkled it on roasted vegetables. It’s inexpensive, simple and a great way to be introduced to Indian flavours without having to invest in a cupboard full of stuff you only use once.
Find it in the spice section of most grocery shops or make your own garam masala.

- 500 grams Green Beans trimmed
- 25 grams butter
- 1/2 teasp garam masala
- 1 teasp rough salt

- In a saute pan, boil or steam green beans, covered for 5 minutes, or until tender.
- Drain and quickly rinse with cool water to stop cooking
- Wipe the pan dry, and return it to the stove. On medium heat, add butter.
- After 1 minute, the butter should foam and brown slightly. Add garam masala and fry just a few seconds until fragrant
- Add beans and salt; toss until beans are evenly coated.
- Taste and season with additional salt or garam masala if needed
